This is a blend of 60% Chardonnay, 30% Chenin Blanc and 10% Mauzac from southwestern France.  This AOC prides itself on being the oldest Sparkling Wine in the world, dating back to the monks in the year 1531.  Light golden in color with a nice mousse of many small bubbles.  The nose is nice with green apples, ginger, slight vanilla, toast and a slight nuttiness.  Medium bodied.  Good acidity.  On the palate, this has a nice texture.  Flavors of green apple, slight vanila, slight almonds and slight char.  Good finish.  This is an impressive sparkling wine especially for the price.  It should be very food friendly pairing with most foods and it is nice on its own.  It would go very well with almost any Quiche.  Try to find young bottles (look at the Euro date stamp).  This seemed better than a bottle tried almost two years ago to the day.  Perhaps that was a vintage thing or perhaps it had to do with Covid/storage/age etc.
