This is one of the oldest bottlings for Bouchard whose history goes back to 1731.  It celebrates the Carnot family who sold the vineyard to the Bouchard's back in 1775. Ruby in color with purple swirls, mostly clear and bright.  The nose is very tight but with air opens to show plums, black cherries, chocolate and a bit of earthiness.  Full bodied.  Medium tannins.  Good energy.  On the palate, this is ripe with sour cherries, black cherries, coffee beans and spice.  Long finish.  This still seems a bit young but also very much on the bigger/riper side of Burgundy.  if opening soon, give it some air.  drink over the next ten to fifteen years.  Better with food although good on its own.  A beef stew would of course, be great.
