Though Paso Robles will never compete directly with Napa Valley Cabernet, the Paso style of Cab is unique unto itself. Cabernet from Paso tends to be bigger fruit, more ripe, softer tannic structure and less formal that Napa brethren. Textbook’s 2022 offers bright raspberry and blueberry compote notes, for a thicker, richer style of fruit. The tannins are soft, the acidity mild and overall this is a very friendly Cabernet. The oak treatment here supports the fruit and you can readily identify the tannic structure and the soft vanilla and charred wood notes, which play second to the fruit. Additionally you’ll find blackberry, black cherry and candied cinnamon throughout the wine. Comprised of mainly Cabernet Sauvignon, there are small amounts of Petite Sirah, Merlot and Syrah. The fermentation was done in stainless steel, while the aging portion was 14 months in French oak, of which 30% were new barrels. ORIGIN: Paso Robles, California. ALCOHOL: 13.9%
