
It was no surprise when famed chef and founder of the Patina Restaurant Group, Joachim Splichal, decided to start his own winery. Provence is the rosé capital of the world, and rightly so, therefore Splichal, who hails from that region, knew that Provence would be his winery’s home. Comprised of mainly grenache and cinsault, there is also 10.5% rolle and 2.5% syrah, making this light and refreshing. There is great acidity for a variety of foods, including spicy Indian. The 2020 is brimming with guava, lemon-lime, white peach, rose water with hints of black cherry and watermelon. This easy drinking wine is what you expect from Provence, and this doesn’t get more classic.
